Sunday Scrappin

After too long a scrappy break, I'm back! I have less than 100 days left in this pregnancy and really want to get Lydia's first year album complete before baby arrives. Which means I need to get back to scrapping weekly. It also means I have a whole lot of other stuff to do but that's another post. Friday I got together with a couple of friends and scrapped! I was so happy to finally get back into it. Saturday I got some time to scrap again and have eight {nearly} finished pages total. =D

Tada!:
These are pictures from Lydia's first birthday celebration at home. It was a small party, Shawn left for deployment the month before. I still have some journaling to do.

The month after her birthday the kids & I took a trip to visit family in New Mexico and my step-mom wanted to throw a party to celebrate there as well. Even with just family we had a full house. I love the cake she made and Lydia loved the ribs. She actually had a meltdown when we took a rib away when it was time for cake. We gave it back and the rib didn't leave her sight until she was done eating.

Ta-do:
  • Today after my usual cleaning I'd like to go through my almost finished pages and do whatever is needed to finish them - journaling, titles, embellishments or make note of pictures to print.
  • Scrap at least once this week. I'm not sure how many topics I have left to finish Lydia's album but if I can make some time at least once a week and complete at least 4 pages I should be done with some time to spare.

Hybrid Cooking {?}

I was thinking about the downfalls of having all of your meals in the freezer. There aren't many but they can be difficult to work around.
  • You're somewhat limited on recipes you can use. Some things aren't recommended  to freeze and even if you can get away with it the texture may change some. {note: the issue I had with the mac & cheese}
  • There's no room for spontaneity! Not a really big deal - unless you're pregnant craving something that isn't in your freezer to thaw out.
  • Repeats can get boring, even if they're good...it's boring.
  • You might miss cooking. I know! Never thought I would say those words but it's true.
My plan for freezer cooking is going to be changed slightly to resolve some of these issues. I still want to prepare two weeks of meals {why not if they fit} but this time I'll also have another week of meals planned that I'll make start to finish the night of. In addition to that I would love to make a variety of sauces (serve over pasta, chicken, etc...is there an etc?) and freeze those. This means after two weeks I'll still have one weeks worth of meals in the freezer so when I make more meals for the freezer in two weeks we'll end up with more variety of freezer meals. One thing I won't do is freeze pasta, there's really no need unless it's in a casserole because pasta doesn't take that long to cook. That's just less space you have for other meals or parts of meals. :)

Then there are weeks when you have a seemingly never-ending head cold and a freezer full of meals would be great but there's no chance of having a 6 hour block of energy to make that happen and so you're just happy to plan quick meals for each evening.
